MERCY DAY! I hope I’m doing this correctly. Learning about blogging and all the legalities, what I can and can’t do, scares the weebie jeebies out of me! I am hoping and praying I’m in the clear on this. Last week I found a delicious low-potassium soup recipe I want to share. I semi-followed the directions. LOL! To reduce the potassium more, I substituted herb and chive blend goat cheese for cream cheese, still using the same amount.
I pay more attention to the ingredients now that I have to, but I still need to pay more attention to serving size. Shew! Cooking is complicated! This recipe made just enough soup for the hubs and me. Unfortunately, there was not one spoonful left. So if you are preparing for more than two people, you must whip out your math skills and alter the recipe.
